Green Gazpacho

Green gazpacho shot

Ingredients:
(serves 2)
¼ cucumber
½ avocado
Few kale leaves
Sprig parsley
50mls water
½ green chilli sliced and deseeded- optional
Juice of ½ lime
Celtic sea salt and freshly ground black pepper

Method:
Blend cucumber, avocado, kale, chilli with the lime juice and water. Season well and top up with extra water if needed until desired consistency. Serve as a starter in hi ball glasses with a sprig of parsley.
