Ginger Beef

(serves 2)
2 tablespoons apple cider vinegar
4 tablespoons organic soy sauce
1 tablespoon honey
2 cm ginger finely chopped
2 red chilies deseeded and finely sliced
1 teaspoon ground cumin
500g organic beef strips
2 tablespoons coconut oil
2 spring onions chopped
2 garlic cloves finely chopped
2 tablespoons chopped coriander

Mix the soy sauce, vinegar, ginger, honey, cumin and chili in a bowl. Add the beef and mix well so that all the strips are covered and marinade for 30 minutes. Heat the oil in a wok or a large pan until hot. Add the beef, garlic, sliced ginger and spring onions. Cook over a high heat for a few minutes until beef is cooked. Add the chopped coriander and serve with salad.
