Pho Soup

Vietnamese Pho Soup

250mls vegetable or chicken stock
50-100g cooked meat – chicken, or beef, pork or fish
1cm piece of ginger thinly sliced and cut into matchsticks
50g mixed mushrooms
50g bean sprouts, green beans or snow peas
1/4 red pepper
1/2 stalk of baby bok choy roughly chopped or some spinach leaves
1 teaspoon lime juice
1 teaspoon coconut oil or butter
Coriander, parsley or mint leaves, to garnish
Optional hot sauce

Put meat in a noodle bowl. Add ginger and veggies. Heat stock in pot or microwave and then pour into bowl. Add lime juice and season with salt and pepper. Add coconut oil or butter plus hot sauce if you like it spicy. Add garnish and serve.
