Ratatouille

Ratatouille

Ingredients:
(serves 4)
1 medium onion
2 cloves garlic
1 tablespoon butter
1 tablespoon olive oil
1 aubergine (eggplant) roughly chopped
2 courgettes roughly chopped
1 red pepper roughly chopped
4 tomatoes roughly chopped
1 leek chopped
500g tin tomatoes chopped- optional
Salt and black pepper to season

Method:
Heat the butter and olive oil together in a pot. Add onion and garlic and gently sauté for a few minutes until soft. Add the vegetables, season to taste and very gently simmer for 30 minutes. Turn off heat and leave flavours to develop.
