Guilt-free healthy chocolate muffin

choc mintThese delicious raw chocolate muffins should make a wonderful morning tea. Or combine with hot ginger tea for a guilt-free afternoon treat.

Ingredients base:

  • ½ cup of almonds
  • ¼ cup hazelnuts
  • ¼ cup walnuts
  • 4 dates (soaked for an hour)
  • 2 teaspoons shredded coconut
  • 1 teaspoon raw cacao powder

Method for base:

Put all ingredients in a food processor and combine until well mixed. Mix should stick. Press into bases of a mini muffin pan. Place in freezer while you make the filling.

Filling:

  • 2 cups raw cashews
  • ½ cup water
  • Few drops vanilla essence
  • 1 tablespoon raw cacao powder
  • ½ cup coconut oil (warmed till liquid)
  • 1 teaspoon raw bush honey or other sweetener

Method for filling:

Add all ingredients to the blender and process until creamy. Pour into muffin bases and freeze for about 3 hours. Remove from freezer   and top with goji berries and sprinkling of shredded coconut.
